Organic Green Omelet

What’s so good about this meal?


Ingredients (serves 4)

  • 5 large organic eggs or omega-3 eggs
    soy sauce
  • 2 tablespoons broccoli florets
  • 5 spears asparagus, chopped
  • 1/4 cup halved string beans
  • 1/2 cup fresh spinach
  • 1 clove garlic, chopped
  • dash of black pepper
  • olive oil
  • half a fistful of fresh parsley

  1. Stir the eggs and a splash of soy sauce in a bowl.
  2. Put the vegetables, garlic, and black pepper in a hot pan with olive oil and saute for just 5 min to preserve vitamins and minerals.
  3. Mix the parsley with the eggs and pour over the vegetables.
  4. Stir for about 30 seconds.  Let it sit for a minute, then stir it again until the eggs firm up.
  5. Let it sit for 1 minute, then flip it and remove it from the pan.
